One-pot spaghetti puttanesca

Easy, one-pot, midweek dinner for the whole family. Double it, and invite your neighbours. Recommended with Caprice du Temps Pinot Blanc.

I invited my neighbour over for dinner on Wednesday. Both of our husbands were somewhere else for dinner. Better for us. The kids can play together. We (I) get some adult conversation.

She arrives and asks, “How can I help?”. I give her the tomatoes to chop up. “This looks great Jennifer,” she says when I show her the recipe. “Where’s the wine?”

I tell her I wanted to stop drinking wine for one month. Just to see if it makes a big difference. I can just use extra broth.

“What? No wine? No way! Not that. Stop something else. Don’t stop the wine!”

We opened a bottle of Pinot Blanc and finished making dinner.

INGREDIENTS
15 ml olive oil
2 cloves garlic minced
500 ml cherry tomatoes sliced in half
salt and pepper to taste
pinch red pepper flakes
500 ml vegetable or chicken broth
250 ml dry white wine
225 g spaghetti broken in half
1 can cannellini (white kidney) beans rinsed and drained
handful black olives pitted, sliced in half
handful capers drained
handful fresh basil chopped
Parmesan cheese grated

INSTRUCTIONS
Choose a large-ish pot, this is an all-in-one dish. Heat oil on medium heat. Add garlic and cook until fragrant, at least 30 seconds.

Add tomatoes, salt and pepper to taste. And the pinch of pepper flakes. Stir often, until tomatoes are slightly softened (3 to 4 minutes).

Add broth and wine and bring to a boil.

Add spaghetti and return to a boil.

Reduce to medium, cover, and cook, stirring occasionally until spaghetti is al dente, or how you like it. I like it al dente.

Stir in beans, olives, and capers until they are heated through.

Split into plates. I like to use pasta bowls.

Sprinkle with chopped basil and parmesan cheese.

Serve! Preferably with the rest of the wine, but if none is left (because you have shared it already with your neighbour, maybe open another bottle!
