Whenever I am sick, I like to make myself chicken soup. It feels like I am taking care of myself. Quite simply, it makes me feel better. You can always use something to make you feel better when you are sick, right?
Today, Jman was sniffling and coughing. I kept him home from school. AND I made him chicken soup for lunch.
INGREDIENTS
2 litres of water
A tablespoon of chicken bouillion (I use Knorr)
1 sliced onion
4 carrots, peeled, thickly sliced, then sliced in half again
A handful of brussel sprouts, cleaned and chopped in half
Handful of green beans, chopped to about 2 cms long
One or two chicken breasts (depending how big they are), thinly sliced
METHOD
Boil water. Add vegetables. Boil for a minute or two. Add chicken. Continue until chicken breast is cooked through. About one or two minutes.
I like my vegetables fresh, al-dente. I don’t like them cooked through. So, the less you cook, the better they taste. That’s it.
