Easy spring salad
Dark green leaves, sliced apples, thinly sliced red onion, grated carrot. Olive oil and apple cider vinegar dressing. Something I made up on the spot. Add something for protein, and you have a great lunch.

Marinated melon with prosciutto
Another simple recipe. Prepare the cantaloupe (or other melon) in slices. Place the slices in a bowl. Add the juice of half a lime, some finely sliced fresh mint, a bit of salt and pepper. Coat the melon with the dressing. Put on plates. Serve with a piece of prosciutto.
